This is very helpful. Thank you for bringing up this important topic. It's encouraging to see more municipalities offering curbside composting and compost bins at their diversion facilities, and more people doing their part to reduce greenhouse gases from landfills.
Years ago I wrote a short article for Food52 on using herb stems - a great way to reduce food waste that also can improve your cooking. Here is the article:
