Test Kitchen Top 3: The Value of Teamwork

The test kitchen is nothing if not a team effort. Everyone pitches in, from cooking to cleaning to (most importantly!) eating. There are usually multiple dishes simmering or baking at a time, which means that all those involved in prepping and cooking are often dancing around (or bumping into) one another. In the end, though, our talented testers work together to ensure that the dishes are well executed and that the whole operation runs like a well-oiled machine. 1. How many cooks does it take to keep a dish from burning? The broiler can be dangerous, and therefore warrants the watchful eyes of three cooks to ensure that things are crisping, rather than charring.

2. Amanda and Merrill, Food52's original tag team. It's a treat to have these two in the kitchen at the same time. Stirring and prepping their respective dishes, Amanda and Merrill showed us how it's done and served us a delicious dinner. There were, unfortunately, no disco moves or false eyelashes, but there was some exciting talk about the twins' upcoming Halloween costumes.

3. Even the toys pitch in. One of Walker's toys (which he built, by the way) watched over some very important rice drying on the windowsill. He may not be a real guard dog, but at least he didn't eat the whole pan.
