People love anything wrapped in pastry. The easiest ever pastry recipe is just flour, olive oil, water and salt. I posted a copy of my go-to, from a Greek cookbook, in this blog post: http://verdantkitchen.wordpress.com/2011/01/20/holiday-recap-greek-rice-seitan-pie/

Mushrooms, sauteed spinach, cashew ricotta, roasted peppers, artichokes....any combination of these things is a winner. You can do sweet ones, too....apple cranberry, pumpkin, etc etc.

I have had HardLikeArmour's pickled prunes and they are divine! Roasted fennel and white bean dip is a favorite and alas is not vegan.

This dip is true vegan, only basil, avocado, lime juice , serrano and few seasonings and is a hit even with my meat eating friends in Texas. http://www.food52.com/recipes/10769_raw_basil_guacamole

For something easy to be made ahead, how about a big platter of crudités with roasted garlic hummus and jean Anderson's red pepper spread. Also babaganoush (roasted eggplant with olive oil and lemon) with toasted pita

If you have time, spring rolls and cashew dipping sauce are always impressive.
