Purists would say you can't even reheat it! I suppose you could freeze it and make rice cakes out of it when you take it out.

Imho, the beauty of a proper risotto lies in its freshness, You would totally lose that by freezing it.

Yes you can- but it will not taste as good as made fresh. You can also make it 3/4 of the way holding the cheese and feature ingredient out. Thaw, reheat with last ladle of broth, cheese and ingredient.
