Try to get organic lemons, I agree w/ Amanda, you want lemons that are not sprayed with any pesticides.

Regular lemons are great. I have found that Meyer lemons are too "wimpy" for limoncello.

Regular lemons are totally ok but since the peel is used I'd recommend looking for ones that are unsprayed.
