Can I use all purpose flour instead of pastry flour?

Yes, but not cup for cup. 1c pastry flour = 1 c minus 2 tbsp AP flour.

What are you making? The answer is probably yes. The different in protein content between AP flour and PF is in the neighborhood of 1.5 % points.
