What type of pear is best for carmelizing?

I caramelized pears this holiday season twice for a salad and I used Bosc, but the key was to make sure they weren't over ripe. I used butter and brown sugar to caramelize. So yummy even for my non-pear lovers.

In my experience, most pears available at your local market should work just fine. Some are more mealy than others so it just depends on what you have available to you.

I like bosc. They are sweet and juicy and caramelize beautifully.
