When I put the puffs in the oven, they do not turn a brown color or have a sphere shape? Why?

I have a question about the recipe "Cinnamon Sugar Breakfast Puffs" from fiveandspice.

They don't tend to get very brown, only lightly golden. The sphere shape is dependent on how tall you fill your muffin pan, I think. Mine don't usually come out round like the tester's do either - they look more like muffins. They'll still taste good!
