Does anyone have a GREAT recipe for stuffed pork chops??

I always feel that fresh herbs and goat cheese do the trick when stuffing something. However, it depends on the rest of your meal. Maybe roasted red peppers and feta? Maybe sautéed Swiss chard and garlic?
