aged provolone. you get intense, sharp flavor with about half the cheese you would normally use. and a dusting of parmigiano reggiano on the top before you bake.
A calzone is usually made with a pizza dough and can be stuffed with any assortment of meats, veggies and cheeses....think of a pizza folded over onto itself. One of my favorites is a spinach, ricotta and mushroom and served with a sauce on the side.
