Shred a cup of each cheese you want, I suggest Gruyere, Cheddar, Colby Jack, and maybe some Muenster. A large pot on medium heat. Add a three T of butter and melt until it sings. Add 1/3 cup of finely minced onion, sweat for ten minutes, add 2 minced garlic cloves, sweat for 2 minutes. Add 3 T AP flour, saute for 5 minutes. Add 1 bottle of lager beer. Add 1 cup heavy cream and 4 cups whole milk. Whisk constantly when adding beer, cream and milk. Turn off the heat and add in the cheese a cup at a time, whisking constantly. Eat immediately.
