Chia seeds are like flax seeds on steroids. They're rich in fatty acids and provide protein, fats and fiber. They can be eaten raw or ground and are often softened in water or fruit juices and made into drinks, puddings and porridges. They do turn gelatinous when soaked in liquids -- a characteristic that some people do not like.
