I have made Clotilde's Larabars I do recommend them. However, as a distance runner who needs an energy snack daily, it's just as tasty and much easier to grab a couple of dates and a handful of walnuts. Same taste, no effort.
Simply process a mixture of nuts, dates, cocoa powder and some sort of sweetener like honey or agave. You just have to experiment with the ratios by adding more dates or nuts. I have also subbed out the dates for dried plums before and cranberries. You can also add things like grated coconut. The. Your just press into a parchment lined pan and cut into the size you want the bars to be and put them in their own baggies.
This is the one I keep thinking I'm going to make, from Clotilde Dusoulier's Chocolate and Zucchini: http://chocolateandzucchini.com/archives/2009/05/homemade_larabars.php
