Does anyone have any ideas for leftover roasted suckling pig? I'd hate to waste it, but I can't think of what to do with it.

Without knowing what the seasonings were it's hard to be precise but you could slice it up porchetta style and serve it between slices of crusty bread. A good condiment is salsa verde (Italian style, not Mexican style) made with chopped parsley, capers and good anchovies.
Tacos maybe or mix a little BBQ sauce for pulled pork
Fried rice is a good way to use it up.
Sometimes I do a stir fry with just ginger and green onion, and a sauce made of light soy sauce, dark soy sauce and sugar. Gets the pork crispy and caramelized.
Wow ! You had leftovers !Try a Cuban sandwich with mustard, mayo and sliced dill pickle. Grill.
Or, with Chinese hoisin sauce in a lettuce wrap with shredded carrot and scallion.
