Ras el hanout or "top of the shop" as it litterally means is a mix of 30 spices or so.
You Can make your own this way:
1 teaspoon ground cumin
1 teaspoon ground ginger
1 teaspoon turmeic
1 teaspoon salt
3/4 teaspoon ground cinnamon
3/4 teaspoon freshly ground black pepper
1/2 teaspoon ground white pepper
1/2 teaspoon ground coriander seeds
1/2 teaspoon cayenne
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
Whisk all ingredients together. It kan be kept for one month if kept in an airtight container.
