This is just me, but I would stay simple with the grit's preparation and do a salt, pepper and butter version so you get a good taste of the grits because it sounds like you have a good product. Maybe a dash of cayenne pepper, and don't skimp on the butter, but just cook them for a long time and let the good corn flavor come through. I always think it's a good idea to start simple and next time you can add cheese or something.

Awesome! What kind of grits do you have and what are you planning to do with them? The basic is slow cooking them in salted water with a lot of butter cooked in, but there are lots of great variations.
