How long can ratatouille say cooked in the fridge before serving? 2 days ok?

Hi! I'd like to make ratatouille on a Thursday, keep it in the fridge + serve on Saturday afternoon. Will it be ok?

Consider making caponata. It has similar ingredients to ratatiouille, but uses vinegar, which will make it a better keeper. However, you should be good for at least several days.

I agree with amysarah. Letting it rest will help the flavors meld together.
