Red cocoa

We went to a bakery the other day that had red velvet cake without red food coloring - the baker said they buy red cocoa from france. Even he didnt know what made it red...anyone ever used this product? Or know why its red (please dont say french red food coloring!)

It's highly alkalized (Dutched). There are American brands as well.
