Be sure to get the whole bean with the green coat. Sometimes you'll see them in packets labeled for sprouting.

Mung beans should be labeled as such -- they are small, roundish, and yellow-green in color, and you should find them in the dry-goods or bulk section. They will indeed make very nice sprouts.
