Any way to make "sausage" with left-over ham-hock meat?

I've got a beautiful ham hock that we used to make stock for a soup recipe but the meat is left over. I've found some great ham and sweet potato hash recipes but want to come up with an accompanyment for ricotta pancakes. Any ideas would be welcome!

Wow, usually I just put the meat from the hocks back into the soup. You could simply slice and fry the leftover meat in some butter to go along with the pancakes ...
