I think ideally a mixture of dried and fresh spicy peppers - on the dried front - anchos, guajillos, chipotles, really any good dried smoky pepper (I smell them all when I am deciding, which other shoppers might find odd but whatever, you want that chili rockin!) and then if you can get some fresh jalapenos and poblanos and roast them, peel them, and add them, you are well on the way to a damn fine chili
