why don't my curries taste like take away curry?

They probably have less ghee.
Ghee is old school we use oil now its when u put
The oil in then is when curry takes shape
Probably yours doesn't have MSG in it. Or beef fat. My favorite japanese curry mix includes both and tastes pretty much exactly like what I get at restaurants.
Or is it thai curry? Are you using enough fish sauce?
