I've had great success with NIgella Lawson's recipe. Like the King Arthur recipe, it's not true fudge, but it's equally delicious and doesn't require much work or a candy thermometer. Hers calls for pistachios, but you can certainly leave them out or substitute them with your favorite add-in.
