      When sautéing, is it better to add grated ginger first, or after the onions have gotten soft? Is there a risk of overlooking, as with garlic

      I am making a ground chicken with chilis, lime and ginger.

      Yes, there is danger of overcooking the ginger. I'd add it, as you suggest, when the onions are soft.
