I'm making GluttonforLife's Tuscan Chicken Liver Pate recipe but don't have vino santo. Anybody have a good substitute?
Manzanilla Sherry from Spain; late harvest Reisling; white port. Nothing is exactly like vin santo but these will be good substitutes.
Not Tuscan or the same as vin santo, but madeira is nice in a chicken liver pate. I make one with cognac too, if you have that on hand. Just say it's French instead of Tuscan and it will all be good ;)
