Saving underbaked loaf

I didn't realize I had underbaked a quick bread until I came home and it had sunk in the middle after several hours. I stuck it back in the oven for several minuets but it's still guey in the middle. Can I salvage it?

Probably not, but you can cut around the underbaked portion and eat that.

I'll bet you could take the underbaked portion (or even all of it), make a custard, and make a "bread pudding" type thing out of it (sweet or savory, shouldn't matter) and "save" it that way.
