What is a head of escarole? How much is it?

Is it whole plant or a part of it?

It is a leafy green, slightly bitter, to be used for cooking or in salads. It comes in the form of a head, like a lettuce would, the leaves are lacey/spikey. It is the whole plant, like a head of lettuce.
