I have a vacuum packed chunk of country cured pork side meat in my fridge that I want to use for pinto beans. Just a piece of it. But it has no expiration date. I think I bought it in March.
It is safe to use. Freezer burn would be an issue if you see it but not likely if it is originally packaged.
