Absolutely. Just follow the same rules you would while baking multiple shelves of cookies. At regular intervals rotate the pans from front to back and switch the pans shelf position moving the top to bottom and bottom to top. This will ensure even roasting and compensate for any hotspots in your oven. Also divide the oven equally in thirds with your shelf positioning. I always roast two chickens in this manner-why roast 1 when a leftover bird is the hugely versatile to have on hand.
