making a cake from scratch, only have olive oil, crisco, butter, margarine, apple sauce - no veg oil. what's my best recourse?

Olive oil adds a really deep, dense, fruity flavor. If that sounds good use the olive oil.

The recipe calls for olive oil and white wine, and turns out a fantastic moist and flavorful chocolate cake.

What type of cake are you making? If it's something that would work will with olive oil, I'd go for that. Chocolate cake or plain cakes made with olive oil have a great fruity dimension.
