Olive oil adds a really deep, dense, fruity flavor. If that sounds good use the olive oil.

I've used applesauce in chocolate cake with great results.

I'd highly recommend Midge's Grown up birthday cake: http://www.food52.com/recipes...
The recipe calls for olive oil and white wine, and turns out a fantastic moist and flavorful chocolate cake.

What type of cake are you making? If it's something that would work will with olive oil, I'd go for that. Chocolate cake or plain cakes made with olive oil have a great fruity dimension.
