I'm using the recipe from Gourmet (now on Epicurious that has 1 1/2 c. each of butter & sugar, 1 c. molasses and 3 c. flour.They're supposed to be thin and delicate but ours came out thick and hard.

Several factors may be affecting the outcome. The batter should be spread fairly thin and even. Your oven temperature may actually be higher or lower than what you think so maybe watch the cookies are cooking too long.
