I want to make roasted garlic mashed taters.Can the roasted garlic sit for a few hrs or does it need to be used immediately? Thx

It can definitely sit for a few hours! you could even do it the day before and store it in the fridge (smushed out of the wrappers) with some olive oil on it.

A few hours? No problem. A few days, well that could be trouble. Leave it in a bowl covered with cling wrap and go bowling.
