In the town of Ubud in Bali, they rub whole pigs with their spice rub) and spit roast them over coffee wood. It is piggy nirvana. To make your own take 5lb boned shoulder of pork and apply your rub. Roast in oven set at 450f for 20 mins then reduce to 350f for another 2.5 hours. Baste regularly with veg oil mixed with 1tsp turmeric. Shd give you crispy skin and melt in the mouth piggy. Serve with steamed rice and a bean and coconut salad. Enjoy!!
