I use a recipe from Julia Childs Way to Cook. A variation on her Brisket recipe. Onions Tomatoes garlic and in the oven for about 3 to 3/12 hours. 4 lb corned beef1/2 teaspoon thyme2 large cloves of garlicOlive oilGround pepper 28 oz can plum tomatoes. I used diced1 1/2 cups sliced onionAssemble spread thyme and garlic oil and pepper on BeefPlace meat fat side up in a roasting pan. I use a Dutch ovenSpread on the onions and tomatoSeason lightly with saltCan be cover and refrigerated for up to three hoursPlace in a 300 degree oven and roast basting about every 30 minsIt is done when a fork pierces it quite easily but still holds it shapeLet rest. You can boil down the juices for a sauce Carrots and potatoes for a side.
