oven roasted corned beef

My mother used to oven roast our corned beef dinners. I'm looking for a recipe. Thank you in advance.

I use a recipe from Julia Childs Way to Cook. A variation on her Brisket recipe. Onions Tomatoes garlic and in the oven for about 3 to 3/12 hours.

4 lb corned beef
1/2 teaspoon thyme
2 large cloves of garlic
Olive oil
Ground pepper
28 oz can plum tomatoes. I used diced
1 1/2 cups sliced onion

Assemble spread thyme and garlic oil and pepper on Beef
Place meat fat side up in a roasting pan. I use a Dutch oven

Spread on the onions and tomato
Season lightly with salt

Can be cover and refrigerated for up to three hours
Place in a 300 degree oven and roast basting about every 30 mins

It is done when a fork pierces it quite easily but still holds it shape

Let rest.

You can boil down the juices for a sauce

Carrots and potatoes for a side.
