April Dessert Ideas

I am making a dessert for gastronomically conservative colleagues in April, and would love your thoughts about great desserts to make. I thought about making Dirt Cake--but making my own pudding/brownies, etc., instead of buying the overly sweet, store-bought components. But I'm open to anything.

Coconut cake. Or maybe a lemon chiffon cake.

Lemon-apple curd is delightful and a little different. You want light. Very light. Lemon tart topped with whipped cream will please the gastronomically conservative. Consider bringing brownies, too. Everyone likes one or other or both of those. Don't bring berries unless they're local. Whatever others are available will lack the flavor necessary to stand up to the lemon. ;o)

Chocolate desserts, while not particularly "Springy" are usually big favorites. What you choose depends on a lot of factors. Are you a baker? or do you prefer something more like a parfait or pudding? Lemon curd, while not exactly Spring-like, combines well with various berries, which are just beginning to come into season. I love doing lemon tarts and garnishing them with either candied lemon slices or berries.
