I want to make some kind of Danish Dessert (the pudding that Junket makes) out of unsweetened black currant juice. Anybody got any ideas? Thanks.

Ahh. I had to research this for a Girl Scout "Tasting Bee (our assigned country was Denmark). The dish is called Rød Grød med Fløde which apparently translates as Red Berry Pudding with Cream. You can use all kinds of berries (currants are a great choice). Google it..... but you add sugar and pectin and it makes a very flavorful dessert. The cream is a must.

Saver magazine (Dec 2013) has a good recipe for this dish.
