What kind of cans are best for baking Boston brown bread?

I would use any mid-sized unlined can--some cans have a plastic lining, which makes me twitchy about using them for baking.

Thirschfeld, that font of wisdom on all things culinary, apparently uses regular soup cans (see http://food52.com/recipes/14934-steamed-brown-bread). But I like coffee cans.
