What is mâché not an experienced cook

Oh, good grief. I was trying to write 'mâchè'

It's a green with a nutty flavor. Some similarities to arugula.

It is a small leafed green lettuce. I can never find it around where I live. I substitute baby greens which my local grocery has year around. There is a wiki reference page on Mâché if you want to know more.
