Dinner party for 4 and want to make a paella. I'm open to trying something special in a paella any suggestions?

I use a mix of seafood and land food: chicken thighs, chorizo, prawns, clams, squid, any white fish chunks. Don't skimp on the saffron. Onion and fresh peas (frozen do fine) Use some clamato juice if you feel daring.

In lieu of chicken: rabbit, quail, pigeon or pheasant would all be interesting options.
