Bread making

I just made dough for some whole wheat bread. I forgot I have an appointment in an hour so I won't be home to put the bread pans in the oven after the second proof. Should I put the pans in the fridge and do the second proof when I get home? Not sure what to do.

don't shape the loaves until you get back Put the dough (covered) in a draft free place. It won't hurt it to rise again. When you come home,punch it down and form the loaves for the 2nd rise. I've done that countless times.
