It's usually sold in the refrigerated cheese section (not dairy aisle) of most markets. Sour cream would be a good substitute.

You could also sub in sour cream or plain yogurt.

I've made it using the same ratio that LLStone suggests. I cover it with a lid and place it in the cupboard overnight. I avoid using ultra pasteurized cream as I believe it inhibits the ability for the cream to thicken. In my opinion there isn't a good replacement for it so learning to make it will empower you to consume it when you choose. Enjoy!
