What heat do you put on for a basted egg--in which I fry it then pour some water into the pan and let it steam.?

The post on How to Make the Perfect Fried Egg (http://food52.com/blog/4466-how-to-make-the-perfect-fried-egg) might be helpful. The very last version of fried-egg perfection from Melissa Hamilton and Christopher Hirscheimer (from Canal House Cooking) is a basted fried egg. (Though it's basted in hot butter rather than water.)
