If you happen to crave a bagel while in Beijing, go to Julian Tavalin's bagel shop. They are homemade! http://english.cri.cn/8706/2013/01/16/3262s743884.htm
I was in Bejing a couple months ago and did not have any congee as it did not appeal to me, but did enjoy the many dim sum offerings. Most hotels also serve bacon and eggs but you can get that at IHOP at home . Explore the dim sum.
Bin (or bing) is delicious. Author Charlotte McGuinn Freeman has a lovely post about long-ago bings here:

So many options! One of my favorite simple breakfasts was you tiao (Chinese fried crullers) and hot, fresh soymilk. You can eat them separate or dip them (there's actually a song dedicated to the combination!). I've also had savory dou hua, which is a tofu pudding and it is delicious. There are plenty of other fried or steamed pastries you can have too. One of my other favorite breakfasts was jian bin, which is a kind of griddle pancake with an egg and some other components that you can buy at some stores or food carts on the street. Let us know what you end up eating!
