Make it interesting please. The community I live in does potlucks on a regular basis and food is typically bland and under seasoned---stuff like overcooked quinoa mush with no salt. You could do something as simple as meatballs. In Italy meatballs (polpette) are served by themselves and not on top of spaghetti. Zest it up and people will remember what you brought.

I've brought it to a potluck once and it was a big hit. Also nice b/c they're delicious at room temp.
