The farmers' market had some nice duck legs this week. I thought I'd do them on the grill with some eggplant. Any tips or recipes?
Love doing a wet brine with orange, thyme, sesame seeds, and honey
I also like an orange flavor with my duck. I marinate mine in thawed orange juice concentrate with a healthy spoonful of sriracha or sambal and 1/2 cup of soy sauce(to start the brining process)...this gives considerably more flavor than most brine/marinades.
