Can I just double all the ingredients?

Yes you can double the recipe but be sure to either bake it it into a large enough pan. For example if you would have used an 8x8x2" square baking dish, that holds 8 cups so you'd want to use something much larger unless you'll bake the doubled recipe into 2 baking squares
