Yes. If you're using potatoes, keep them covered in a bowl of cold water in the fridge, because otherwise they'll start turning color. Just store the other veggies in individual containers or zip-lock bags in the fridge.

If you're using carrots, be sure to also store them in a ziplock bag filled with cold water. Otherwise, as they oxidize, they'll turn purple, as will potatoes. Not that purple isn't a lovely color, just not inappropriately.
