I purchased "purple" cornmeal at a bulk food store on a recent outing. I never heard of this before and eager to know how to use it.

Should I use it in the same recipes as yellow cornmeal? Does it taste different than yellow cornmeal?

Purple corn was highly prized by the Incas. I wonder if it has more anti-oxidants like purple fruits. Anyway I would use it like you'd use normal cornmeal to make fun colored polenta, corn bread, pancake or waffle batter, tortillas etc.
