The vast majority of macaroni and cheese recipes seem to call for 1 pound of macaroni and the accompanying sauce, which is way too much for just little ol' me. Is there any reason I can't just halve a recipe and all its ingredients?

You could certainly halve the recipe or you could make the whole amt but bake it in small loaf pans and freeze the ones you aren't using. Then defrost the next time you have an urge for mac n cheese

I agree with Monita. If you don't split and bake one and freeze one, make sure you use a smaller dish size and watch the baking time.
