I have seen somewhere an appetizer where shredded cheese is sprinkled in small piles an a cookie sheet and either baked or broiled

Until melted. They become crisp when cooled.

I would like to know what these are called and where I can find the recipe and exact method for making them.

The word you're looking for is "frico". Grate some moist parmesan and arrange on parchment, maybe top with a little fresh black pepper. Bake for about 8 min. at 325F. Transfer to paper towels to cool. Many variations on the theme. You can form them while warm and fill with anything pipeable. I normally don't like cheese on my burgers but, yum!
